Today we produce only 4 tons of caviar per year and export 40% of our total volume worldwide. We take a great care in our caviar processing. We are ISO 22.000 certified for food safety and obtained the PGI certification for Caviar d'Aquitaine last month. Our caviar has a shelf life of 12 months when treated with borax and 6 months without.
