Tasting notes :
Golden colour with deep amber highlights
The nose offers subtle woody and spicy notes followed by brioche cake and cinnamon
The taste combines fruity and woody aromas. It finishes over fruit-filled pastry and light spices
Production facts :
Terroir : Chez Maillard estate in cru Fins Bois, and Maine Drilhon estate in cru Petite Champagne. Cru Fins Bois: 50% groies, hard limestone from the Jurassic and 50% groies of champagne, soft limestone from the Cretaceous. Cru Petite Champagne : Champagne land, soft limestone from the Cretaceous.
Grape variety : 100% Ugni-blanc, average age of the vines : 40 years.
Vinification : On site, alcoholic and malolactic fermentation in thermo-regulated stainless steel tanks.
Distillation : Double distillation on lees, in 16 and 25HL Charentais copper stills with olive and onion-shaped lids
Ageing : Ageing in new barrels for 6 to 8 months, then passage in red and old barrels for several years. Barrels of 400L, in French oak type Limousin, quality loose grains
Blend : Crus de Petite Champagne and Fins Bois, blend of 4 years of age minimum.
Alcohol volume : 40 %
