About
Vinegar has been closely tied to the wine trade in France since the Middle Ages. When wine was transported by boat, it sometimes arrived in poor condition in Bordeaux or Orléans. Vinegar makers would reclaim this wine, transforming it into vinegar and mustard. Inspired by this tradition, we decided to revive the craft after discovering old bottles in our vats during renovations. This connection felt even more meaningful when we learned that a distant branch of our family had founded a renowned local mustard company in 1825. Produced in our workshop, our vinegar matures slowly in oak barrels, developing rich and complex flavors. Aged for approximately three years, it is then carefully bottled on our estate to ensure the highest quality. To guarantee excellence, the fermentation process is closely monitored by the Oenoconseil laboratory, a renowned expert in wine and vinegar analysis. Through meticulous racking and regular assessments, they oversee its evolution, ensuring a perfectly balanced and authentic red wine vinegar.
