Baeri Caviar, made from Acipenser baerii, is characterised by buttery, slightly nutty notes. Baeri Caviar is said to be balanced in terms of flavour. Osciètre Caviar, from Acipenser gueldenstaedtiii, is characterized by its iodized notes and marine flavors. Also known as Ossetra caviar, Osciètre caviar is today one of the most emblematic caviars in French caviar production. Osciètre caviar embodies excellence and refinement. Its medium-sized grains are distinguished by their golden or dark brown color.
