About

The Pavés de La Rochelle® have been a speciality of CRIOLLOS artisan chocolatier since 2012. These little squares of hazelnut Gianduja chocolate contain caramelized hazelnuts and a hint of fleur de sel from the Île de Ré. They are sold exclusively in CRIOLLOS boutiques.

The Pavés de La Rochelle is available in two packaging formats: in cases (100g or 220g) or in cubes (160g or 450g).

Pavés de La Rochelle... a short history: Criollos created Pavés de La Rochelle as a tribute to the story of Rue de l’Escale in La Rochelle. Named after 17th-century adviser Jean de L’Escale, the street is famed for its historic cobblestones, sourced from ships' ballast stones from Quebec, Cornwall, Scandinavia, and Senegal. These stones, also used in the city’s ramparts, reflect La Rochelle’s rich maritime trade history, particularly its lucrative fur trade with Quebec. While many streets were paved in the 18th and 19th centuries, Rue de l’Escale remains the best-preserved example of this unique heritage.
